Healthy Mexican Food

As a young girl growing up in a Mexican household, I can clearly remember times as a child when I would eat salt directly from the shaker. I would sneak packets of salt from drive-thru restaurants and I would suck on them until my cravings were satisfied. That is disgusting! Although not as extreme, This wasn’t too far off of what everyone else was doing. A lot of salt was used in EVERY. SINGLE. DISH and it wasn’t just my family or my culture even. Foods everywhere in restaurants and fast food joints contain more sodium in a single serving than your total daily recommended intake for the nutrient. The average American has WAY too much sodium in their diet and not enough nutrient-rich foods.

I am proud of my culture but since I changed my eating habits I had to get creative if I wanted to continue enjoying my Mexican dishes. So I did what every healthy person should do and that is I made it my own. I took all of the ingredients and I removed the table salt. I use Mrs. Dash no-salt seasonings and small amounts of pink Himalayan salt on certain dishes instead. I ask myself this question pertaining to each ingredient “Is this the freshest option?'“ and if there is a “fresher” option I would use that instead. By doing this I was able to taste all of the same natural flavors of each of the ingredients and I LOVED IT!

You can apply these techniques to any dish and benefit greatly from it. Here are a couple of videos of quick and easy healthy meals with a Mexican flare.

In the next video, you will notice I am cooking more food, and towards the end of the video, you’ll see why. I am a mom which means I have 1,000,001 jobs to do on any given day. And if you’re anything like me, you don’t want to be in the kitchen any longer than you have to. Well if you follow my lead, I will show you how to meal prep simultaneously as you prepare dinner, and your meals for the next few days can be portioned out and ready for you to grab, heat, and enjoy when you’re least likely to be in the mood to cook. Learn more about meal prep by reading my blog named The Secrets to following your meal plan… Meal Prep.

In addition to the video recipes, I have also attached some of my golden nugget recipes for keeping the Mexican flare going no matter what you're craving. See below for different types of salsas that are quick and easy to make, fresh, healthy, and delicious!
